A restaurant can only successfully represent a region if it knows it. I joined the start-up team of a brand new restaurant from Amsterdam on a study tour to explore South Africa's gastronomic heritage.
I was filming alone as a camjo and making photos documenting the best moments, but as a team member I also learned a lot about local ingredients and traditions. The documentary will be a year in the making, showing the behind-the-scenes work up to the moment when the restaurant opens.
